Pure nose, full of minerality and flint which is a typical hint of Santorini’s Assyrtiko. Notes of matured stone-fruits and tart of citrus fruits. The palate shows considerable depth and genuine concentration, rich and dense with finesse and well balanced acidity. Long aftertaste with saltiness and minerality.
Pyritis is made from extraordinary three parcels of 100% Assyrtiko that can be more of 120 years of age, two in Pyrgos and one in Megalochori. These are two villages that are highly regarded for producing top quality grapes.

Chablis Premier Cru - Cote De Lechet
The age of the vines, along with their exposure and terroir, make this cru a flattering, round, and well-structured wine. It also displays a beautiful mineral character and is highly expressive on the nose. This wine pairs well with saffron-roasted langoustines, chicken breast with Époisses cheese, or fillet of pike-perch with white butter sauce.
The parcel of our Chablis 1er Cru Côte de Léchet is located in the Milly commune, on the upper slope of the same name, which is extremely steep (38%) and faces southeast, receiving full sunlight. The vines are approximately 50 years old, resulting in a low yield and small clusters. They are pruned using the Guyot Double method and harvested by machine.

The grapes are hand-picked and whole-bunch pressed, a traditional approach to keeping the wine fresh and crisp. The resulting juice goes into barrels for fermentation, along with wild yeasts that build complexity and texture. The wine ages for 11 months, with malolactic fermentation used selectively to provide balance.
Cloudy Bay Chardonnay 2022 is one for connoisseurs and gastronomic adventurers: refined, poised and balanced. Painstakingly made using traditional techniques, it is a true ‘food wine’. Fruit from vineyards in the stony soils of Wairau Valley and the dense clay of the Southern Valleys work together to create a wine that marries ripe stone fruit and citrusy elegance.
