Natural sweet wine from the DO Jerez - Xérés-Sherry, oxidatively aged, its best qualities come from the grape variety used for its vinification.
The grape from which the musts for our Pedro Ximénez Triana come from is a Pedro Ximénez grape, subjected to different degrees of sunlight, and after very careful preparation, musts with great sugar content are obtained. Its fermentation, slow and at a controlled temperature, produces wines that preserve all the aromas and characteristics of the Pedro Ximénez grapes.

THALASSITIS is produced from Santorini’s indigenous white grape variety, Assyrtiko. All the Assyrtiko grapes selected for THALASSITIS originate exclusively from vineyards in the Episkopi, Akrotiri and Pyrgos regions. The vines in these regions are almost 80 years old. The particularly low yield that never exceeds 25 hl/ha combined with the local terrain and variety, result in an exuberant wine with a strong personality. Enjoy it at 10oC with seafood, fish, shellfish or even lamb stewed in lemon sauce, generally with flavors of moderate intensity, where salt, brine or oil predominate. Don’t forget to pour THALASSITIS into a wide decanter half an hour before serving. You will definitely be pleased by the result! You may wish to age THALASSITIS for a further 2-3 years, which will result in its mineral dimension diminishing, while its fruity and honey aromas will expand.

Cold maceration to the destemed grapes for 12 hours and fermentation with indigenous yeasts at a controlled temperature of 16 to 18°C for a month.

The color is brilliant yellow with some gold hues. The Chardonnay variety is typically expressed along with the elegance of the high quality French oak. On the nose, it reveals aromas of lime, orange blossoms and pineapple along with butter, sweet wood, hints of almond as well as minerality. On the palate it is rich and complex with a crisp acidity and flavors of citrus and tropical fruits coupled with vanilla and hints of coconut. The aftertaste is rich, powerful, complex and long.
Fermented and aged in new French barriques for 10 months. Short skin contact, full malolactic fermentation and batonnage. Stelvin closure. Complexity and density without being over-ripe on the nose or fat on the palate.

Each grape variety is vinified separatly. The pressuring is direct and the settling of must need about 10 hours. Then the lees are reintroduced before the fermentation starts in french oak barrels with 1/3 new each year. Toppings up are made regularlyand the rackings done every three month.

Nice straw gold colour, lively aroma, viscous with flavours of apricot, pear, and mango. The acidity is enough to provide grip and a sweet lusty finish.
Grapes of Malagousia are left to over ripen on the vines only during years when weather conditions permit. The must of these grapes is vinified in French oak barrels and then aged for 3 years in the same barrels. The alcoholic fermentation is induced slowly and terminates months later

The most important bottling of the estate, the essence of what Estate Argyros stands for. Meticulously selected parcels, with ages exceeding a century, from top quality areas of the island, mainly Messaria, Karterados, Pyrgos, Megalochori and Akrotiri. Fermented in stainless steel at cool temperatures and aged for two months in stainless steel tanks on fine lees.
