1089 | Rare Earths "Tabouri" Rare Earths "Tabouri"  Dark purple colour with violet highlights, of sufficient density, aromas of ripe red fruits, vanilla, with strong tones of green pepper and aromatic herbs such as basil. In the mouth, it is round, balanced, and aromatic, while the floral flavour is impressive. The aftertaste – which is backed by excellent quality tannins – is long-lasting. Brief pre-fermentation cold extraction in grape pulp, followed by alcoholic fermentation with selected yeasts and extraction at temperatures up to 25°C. Hand picking of grapes is followed by two tables of selection, the destemming and light crushing of the baies. Right determing of the durations of pre- and post-fermentation macerations, allows extracting the aromatic and phenolic potential, before its transfer by gravity to oak barrels.
