For this vintage, 15% of the total quantity was fermented with indigenous yeasts using the “pied de cuve” technique. We picked the desired amount of grapes and pressed them in vessels at our vineyard; this way we allowed the fermentation to start right there, taking advantage of the population of native yeasts present. Bright pomegranate color with blueish hues. Fruity nose -mostly with cherry, as well as strawberry, blueberry and blackberry- complemented by elegant brioche notes. Addedly on the palate, the oily sensation is elegantly balanced by the vibrant acidity.

1096 | Peplo Peplo Pale, brilliant color, the soft coral with red gold hues. Intense and fresh on the nose with aromas of watermelon, strawberry, white flowers, such as violet and rose petals, coupled with lemon citrus, grapefruit and a hint of minerality. On the palate, it has a medium body, nerve and acidity, structure and complexity, coming from acacia and clay. Flavors are consistent with aromas while the finish is long with developing flavors. Each variety contributes with 1/3 to the wine. The Syrah ages on its fine lees in stainless steel tanks, the Agiorgitiko in Acacia barrels and the Mavrofilero
in egg shaped amphoras with skin contact for 4 months.
Peplo. A detail, that gave the name to the wine. The skin of the Mavrofilero is contained in a fabric within the amphora to allow a better control during the extraction process.

1113 | Akakies Sparkling Akakies Sparkling A refreshing sparkling wine highlighting the varietal character of indigenous Xinomavro grape variety. An intense mousse and a bright cherry color, pronounced aromas of ripe strawberry and cherry and an elegant acidity adding freshness while pairing harmoniously with the discrete presence of sugars create a wine that is at the same time dynamic and balanced. The grapes are sourced from the viticultural zone of Agios Panteleimon within the Amyndeon appellation in Florina, Northwestern Greece. The high altitude (700m) and the poor sandy soils of the area lead to the production of wines displaying finesse and a rare aromatic character. The four surrounding lakes that act as a buffer zone create perfect weather conditions for the cultivation of Xinomavro, more temperate than expected in this continental climate. The great diversification of the vineyard blocks, leads to wide variations regarding the technological and phenolic ripeness of the grapes between the different vintages and requires a meticulous management of each vintage. Therefore, the grapes are classified at the moment of delivery at the winery by alcohol potential, acidity, phenols and bunch weight.
